NMR Self-diffusion Studies on the Interaction Between α-Cyclodextrin and Fatty Acids

Abstract: The association between α-cyclodextrin and three kinds of short chain fatty acids was studied by NMR self-diffusion measurements. Dilute solution condition was adopted to avoid precipitating of the solutes. The diffusion coefficient of fatty acid in the solution, which reflects the strength of association between α-cyclodextrin and fatty acids, was found to decrease with increasing alkyl chain length of fatty acid. Together with 2D-ROESY experiment, therefore, it was demonstrated that in forming inclusion complex, the hydrophobic interaction is predominant among various possible interactions between α-cyclodextrin and fatty acids.
