Abstract: During the process of high-pressure microwave extraction, the crude ginseosides in root of Panax ginseng C. A. Mey.(P. ginseng) can be degradated. Some glycosyls can partly be put off and the sub-ginseosides can be obtained. So the sub-ginseosides can be directly extracted from the root of P. ginseng. HPLC-ESI-MS was applied to determine the ginsenosides. The degradation conditions of crude ginseosides were examined and the degradation products of ginseoside Rg1, Re, Rb1, Rc, Rb2 and Rd were also studied. The results indicate that with the increase of the extraction pressure, the contents of the ginsenosides decrease and meanwhile the contents of some low polar sub-ginseosides increase. At the extraction pressure of 600 kPa and the extraction time of 10 min, the crude ginseosides in root of P. ginseng can be completely degradated. The content of sub-ginseosides Rg3 is the highest. The ginsenosides Rg3 can be found in the degradation products of ginseoside Rb1, Rc, Rb2 and Rd.
