Effect of Sucrose and Glucose on the Activity of Acetone, Ethanol and Acetonitrile in Water at 2981K

Abstract: The activity coefficients of acetone, ethanol, and acetonitrile in aqueous solutions of sucrose or glucose were measured by headspace gas chromatograpy at 298.1K.The variations of activity coefficients of three nonaqueous solutes (lnr)with concentration of sugar are explained preliminary in term of the hydration of equatorial OHof sugar molecules, the mixing order of solvents, and the interaction of molecule between solute and sugar.
